With apple pie, I mix the apples with the sugar and spices, let it rest for 1 day on the fridge and then strain them and reduce the liquid. The apples keep their texture.
As someone who has seen American Pie multiple times, that pie with the hole in the middle looks suspicious.
My grandmother made a pecan pie. I don't know how she does it, but the bottom was black and the filling was rock hard. She's southern, She's supposed to be good at this (her mashed potatoes made up for it, though).

mix your apples and freeze them. the soften up way quicker making it easier to cook the crust just right
Can someone please explain why anyone enjoys pumpkin and pecan pies? Seriously, I’ve tried both and they’re yucky 🤢 (fyi I’m British 🇬🇧). Gimme chocolate cake from loblaws over those pies any day, please and thank you 😌.

Apple pie precook about a third of the apples with sugar and cornflour, this gives the best of both.

we use a crumble to top out apple pie, so there is never a crust issue since the crumble just sinks with the filling.
