  1. I usually bake my ribs for 2.5 – 3 hours at 200F and then finish them on the Weber. Next time I might shorten the bake time and give them a little more direct heat… see whether it changes the texture.

  2. This is simple and gets the job done. No need to over complicate things with the two zone grill and aluminum foil and the extra stuff people do. Over low direct heat is all it takes
