  1. Awesome. Well done. People don't realize the nutritional value of this dish. The Paleo Diet is all about eating the inner parts of animals like tripe, also turmeric has a lor of medicinal power like preventing cancer. 😊 Are more Peruvian dishes coming-up, like Lomo Saltado, Causa or Aji de Gallina, being you already have the aji paste?

  2. Great recipe, maybe next time, try not to boil the tripe too long cause otherwise, it will have a very chewy texture. Add the hierba buena just before turning off everything.
