Great recipe, maybe next time, try not to boil the tripe too long cause otherwise, it will have a very chewy texture. Add the hierba buena just before turning off everything.

Just a tip: use red onions next time because the yellow like onions have a sweet taste to them and that changes the flavor somewhat.
Yerba buena is a type of mint that has a citrus-like scent. It's from the Americas.
This is dish is an African influence in Perú.
