You can buy good cous cous from local Arab stores. Also, brilliant idea about the stove! I love it!
I normally fry spices in with the oil for a little bit before adding the tomato paste and then allow the tomato paste to fry up so that the raw flavor goes away before adding liquids. This ensures the blooming of the flavors and aroma. Tajines were one of my favorite dishes when I was in Morocco. I know some of the foods are similar to Tunisia.
The meat got a lot of flavor from the sauce 😋. The steam was crazy , the temperature in the pot must be insane
The couscous grain is supposed to be cooked with steam.
