  3. We call this paneer/farmers cheese. Watched a few clips where the acid is added then rennet. Never used rennet before but I'm not against it, especially plant based. I have lots of clean nettles in my garden. Or even microbial types. I won't however use a bovine source, if animal is needed then goat will suffice.
    The curd does appear firmer and there looks like a reduction in whey.
    I would really suggest trying farmers cheese in place of tofu. When dry, cubed and deep fried or used as is it's a good addition to soups or stews. Just don't mash it up if you're not going to fry.
