  1. I don't use butterand hardly any fat at all. A good steak in a well seasoned cast iron pan or on a grill needs nothing but salt before and pepeper after fyring. I don't like adding pepper before frying it will just taste bitter – and if you rely on fat that means you don't have good beef.

  2. 100% agree, been saying this forever! Basting w lots of butter seemed like such a waste to me, most of It burns off and doesn’t affect the flavor of the meat anyway. If you have a good steak It will contain enough fat to keep the meat juicy and tender, you don’t need extra fat from butter. You can use a few tablespoons of butter to finish a steak on low heat at the very very end, this will give you the same result and be much less wasteful.

  3. I think the point of butter basting is not for flavor. Its to cook the steak from all sides like an oven to reduce the amount of grey band. I can even see it in Guga's steaks. The butter basted steaks had a smaller grey band. Basically butter basting is glorified pan roasting with a flavorful butter at the end
