What is this about squeezing of rice dish when you are eating rice in any of the african countries. Can't you eat the rice with a damn spoon . notting is wrong eating with your hand , don't get me wrong , the squeezing of the rice before eating , I don' t get it.

Watching this video, I realize that the way of cooking yassa is different from one place to another. I'm Senegalese, but I don't prepare yassa that way. I cook the chicken in the oven until it is golden brown. before, I macerate it in lemon juice, vinegar, a little mustard, salt and black pepper. the chopped onions, I brown them over low heat in a drizzle of oil that I do not bring to a boil (too hot oil is bad for your health). Once the onions are almost golden, I add a glass of water, then the juice retained from the chicken marinade, pepper, a little mustard and I adjust according to my taste during cooking. At the end, I add pre-cooked green olives to my sauce. And only then do I add salt. I then add the chicken. for the rice garnish, it's pretty much the same as in the video, except that I never salt my white rice and I don't add oil when cooking it, either.
Yassa is a very tangy delicious dish!! I also include green bell peppers
