I normally make the half chickpeas half fava beans mix, and it works great. One suggestion is to add fresh green peppers to the parsley/onion etc mix, which gives it improved flavour.

This recipe didn’t work for me. Falafel immediately disintegrated in the boiling oil. I had to add flour to the mixture to make it stick together.
I’ve had falafel at a local restaurant in Providence, Rhode Island and they shape theirs like small doughnuts. Crispier and more crunchy surface.

Great video, thank you. Just wondering if you could fry in olive oil in pan, rather than deep fry? Or use an air fryer? I understand the oil is important for flavour and colour but I would never cook with seed oils.

You forgot the garlic… both falafels use garlic in the batter.
I just want to clarify an important point.
Falafel made from hummus grains served in pita is an Israeli invention invented in 1882 by Saadia, a Jewish worker who came from Yemen in 1881, in a settlement called Rishon Lezion.
The name is just not Israeli – because it was convenient to call it falafel to fit into the food that was in the region – the original falafel was made of fava beans and not hummus like the Israeli product – served in newspaper and not in a pita like the Israeli one – and called in Egypt TAMIYA – and not falafel!
Even in Lebanon, Saudi Arabia, who used to serve falafel made of fava beans in newspaper – they started serving it like the Israelis invented, hummus grains served in a pita with salads!
Hummus falafel = Israeli
Falafel from fava beans = Middle Eastern
