One other suggestion: Oxo makes a great, inexpensive mandolin (the chopping gadget). If you find the hand guard difficult to use, try getting a kevlar sharps glove and wearing that instead. I find the veggie holders annoying, but using a mandolin without one is a great way to slice off the tip of your finger (ask me how I know). Kevlar glove gives you the best of both worlds.
