  1. I'm amazed that many Moroccan people don't know that a vegetarian couscous exists. We berbers have many sorts of couscous with a variety of composition. People made it with what they had available in their gardens. The one that is now presented as authentic Moroccan couscous is one sort only that was made in Fès, with caramelised onions and raisins. Exception is made when there are guests, meat must be put in the couscous (or any type of meat like gut parts and preserved meat). I invite those who don't know other sorts of couscous to go and discover them. They will be amazed of how they ignore their country.
    For example: couscous with milk in Khenifra (middle Atlas) and fish couscous in the coastal city like El Jadida, Safi, Essaouira, and so on…..

  2. In fact, all Moroccans do not eat couscous without meat… Sorry, but your guide made a mistake in the explanation… People who eat couscous without meat are diabetics… In general, it remains optional, depending on the customer.
