  1. Looks yummy, like all your great recipes!
    I have just one beef/lamb with this recipe though, I would never overload a single pan with 500g of meat. It does not brown well at all like that. I would brown that amount in 3-4 batches. Can you not hear Louis-Camille Maillard spinning in his grave?

Looks fantastic, super excited about your month of Tunisia!  I have a question: my brother-in-law is allergic to onions, but this seems like the kind of recipe he'd really enjoy.  Would something like leeks be a good substitute, or did you have a suggestion for what else I might be able to use?  Thanks! 🙂  Happy New Year!
