I just Ghana and I tried the jollof of rice, red red, and the Bantu and tilapia I enjoyed all of it the Bantu with pepper sauce was hot 🥵 but good.

Jallof rice and fufu are delicious.
I've been to Ghana several times. Its definitely one of the best West African countries to visit or repatriate to. Having said that, I've tried a few on your list.
1. Jollof Rice: absolutely Amazing!! Its definitely my favorite food. I really love the flavor and spicy taste. I'm from New York and I even eat it up here whenever I find an African restaurant that makes it. You're right, Jolof rice is eaten in many west African countries including Gambia, Sierra Leone, Ivory Coast and Nigeria and Cameroon just to name a few. While I enjoy Ghana''s Jolof rice, I must say that the Yorubas also make fantastic Jolof rice. They have a version where they use coconut milk with it. You gotta try that one too.
2. Waakye: I've tried this and it was also good.it was also something that I ate a lot.
3. Banku: I tried Banku which I was told is an Ewe food. But I didn't like it at all. It's fermented and it has a very sour taste. For me I guess its an acquired taste. But unfortunately to me, it didn't taste good. I most definitely prefer fufu and the many various pounded yams.
4. Fried Tilapia: It seems to be a common fried fish that everybody likes and that I saw on most menus everywhere in Accra. I would always have fried tilapia with Jolof and that spicy green pepper sauce or even with shitor. (Not sure if I spelled it correctly.)
5.Kele wele: I'm not sure if I spelled it correctly but this is also another favorite of mine. It may be an Akan food but I love this fried yellow plantain with Ginger. It may be a kind of snack food. I'm not sure but I oftentimes added it to my meals. Lol. It tastes amazing.

Omg I loved everything I ate. Being of West Indian descent I particularly love the red red and jollof rice, the banku and fish soup and the kankay with soup and my sweet plantains and sugar cane.. I cant wait to go back home to Ghana..

Tuo Zaafi is one dish I have never tried. But the prior five are so good. I'm listening to you talk about it. I miss the food. I am plotting on a time frame to visit Ghana. The food is delicious.
