The secret to great brown pilau is very very golden onions ( burned as she has done) I prefer though red onions for more flavor. ITS NOT THE SPICES GIVING YOU the good color of pilau but the onions

Pilau isn’t an African dish! It was introduced by the Indian communities living in East Africa! The original Pilau was introduced to Indian subcontinent by the moguls ( persians from the now Iran) ,it was then modified to include additional spices by the Indians which is what you now call Pilau! The word Pilau itself is a Hindi word ,the correct Persian name is Pilaf. All East African pilau rice recipes are from the Indian community! What spice grows in Africa to call it traditional African dish- no spice! All these spices originally come from the Indian subcontinent!

You do not dry roast your spices before grinding?? Did you grind a bay leaf?? I would appreciate it when you add something you would say so. What are the measurements…??? POOR production. BTW, there is NO coriander seeds in Pilau Masala….!!!!!

Loved the recipe. Tried it and came out well plus some kachumbari and avocado slices.
