  3. Followed this recipe this evening, it's good. I had no garlic granules so used fresh diced garlic. Also, had no rice flour so doubled up on the corn flour. I will be trying more of your recipes.

I've been cooking for 26yrs , in my restaurant we will safe around a third of used oil, this then gets added to the fresh oil, we do this for a couple of reasons, firstly flavour, oil will take on the flavours, thatcwas fried in it. Secondly fresh oil never really adds colour when you use it for the first time, so adding old oil stops that, once youve finished let the cool completely. Drain the cooled oil from the fryer. Next, you’ll want to strain used oil by pouring it through a fine-mesh sieve to remove any bits of food. Finally, pour used cooking oil into a clean, resealable container. We use a proper oil jug that has a oil strainer in it, this will stop the oil from burning
