Neither chips nor fries soak up fat, because the fat molecules are too big and the potatoes also have no holes, they only stick to the surface. Fries get soggy from the water vapor from within the fries.
Let's just all agree that the very FIRST "chips/crips/potato chips/french fries" happened in Chile, given the fact that there was the combination of fat/fire and ready for this?: Potatoes! in Chile, for thousands of years before there was this precise same combination anywhere else in the world. To talk about any "firsts" anything, having to do with potatoes happening in Europe, is just utterly ridiculous.

You are wrong about we make soggy chips , French fries, has you call them , made from something other than potatoes. Chips have to be crispy on the outside soft inside.
Try eating something other than those produced by Mac Donald's French fries. Soggy my arse.😅

1/4 inch thick is not the original potato chip genius, it's fried potatoes
Here in Germany we have ridged chips with the name brand Riffles. Every time I see them I say out loud, "Riffles have rudges." No one else laughs 🤷
"a quarter inch thick" is NOT a chip, thats a fry…. chips are thin enough that they…. guess what…. chip.
Chips and fries are not the same thing! Chips are chips, fries are a chip of chip. If you are American and call them all fries, that’s wrong!
Chips are a single fried cut potato and are usually chunky. Fries are thinly cut and double fried. The naming should be dictated by the style, not by where you live or “thats just what we call em”

Like you seem to dance around, no recipe wording is quite a replacement for one's intuition as to how a thing aught to be done.
Saying that, namimg sense ranking;
Shaving > Crisp > Chip…. for these sorts, but hey, when I do them at home I use a potato peeler to shave them so might be biased.
P.S. You might like to know that Tayto is still in operation and widely loved in Ireland and amongst many (mainland UK)regions of Irish diaspora, I can recommend a few pubs.that stock them just as a matter of pride because they also serve the best Guiness out of the isle.

I think thias is the case similar to slice bread, it is said it was commonly sold after 1928, but does it mean it did not exist before? Or rather that is was not so popular due to many reasons, I think chips had the same story, everyone knew about frying potates in thin slices, but probably could not make it "marketable"
no trial an error for finding out how hot oil/fat is. if its the right temp, you put a wodden spoon in it with the handle and if its imidiately bubbling around it, its right. Old school bakery knowledge 🙃
Fake black history also credits the wrong people for light bulbs, stop lights, open heart surgery, game consoles, computers and the list goes on and on.
The story I heard was that the "customer "Benjamin Franklin had ordered French fries as he had just returned from France as our ambassador and similar occurrence with with the kitchen chef . I believe the story was related on Ripley's Believe it or not in the 80's.

Oh Max .. I’m so disappointed you used shelf stable lard instead of unmodified lard. You can buy it online, and it would have been accurate for the period. The stuff you used contains trans fats just below the amount they have to report on the label. Protect your heart, my friend.
Chips in the UK should be crispy on the outside and fluffy inside.
