As a Canadian we often do apologize when someone bumps into you. We apologize for being in the way.
Include India and other South Asian countries too.
I feel like these are all american stereotypes.
As a Canadian, we do apologize all the time. If I tell a friend "you dont need to apologize for ____" then they will still apologize for apologizing. We almost all love maple syrup, poutine is our national dish (and I highly recommend it), and we definitely say "eh"… a lot. I wouldn't know what to do if it wasn't part of my vocabulary.
