those hot peppers look like what are called habaneros in the u.s. or scotch bonnet in jamaica/english speaking caribbean.

Thank you so much for the tip ! I guess it never done on me that I could just omit the the tomato paste to make it a " Riz gras blanc" as oppose to the ordinary riz gras. Looks very good! I will try it this Thanksgiving week-end!
