  1. Signature soup for Mbieri people, in Imo state!!! They call it OFE AKWUKWO.It comes with snails, lots of Ugu leaves or pumpkin leaves- (hence, ofe akwukwo), okoro, ugba, dry fish and stockfish. No ogiri is added. The ugba used, is the soft and some what fermented ones and roasted with the leavy wrapper, in an open fire,before adding into the soup. This roasting brings out the charateric smell of the Ugba. Little water is used. DELICIOUS!!!

  2. SIS, THIS SOUP LOOKS DELI'. I'M HAVING SERIOUS LONG TROT HIA O. I HAVE ANOTHER WAY OF WASHING MY FISH. I SIMPLY PUT ALL MY FISH IN INDIVIDUAL BOWLS LIKE YOU DID, SPRINKLE SOME SALT ON THEM, AND POUR BOILING HOT WATER ON THEM AND LET THEM SOAK FOR ABOUT FOR 5 – 6MINS. SOME SEDIMENTS RISE TO THE TOP, DREDGE OF SAND SINKS TO THE BOTTOM, FISH IS SOFT, I BREAK THEM UP, RINSE AGAIN IN COLD WATER AND INTO THE POT THEY GO. :). I MISS EATING UGBA!

  3. This looks amazing!! I've been using your recipes for years to remind me of home & to try new nigerian foods my mum didn't cook. They always turn out delicious!

  4. In all my existence on this earth, this is my first time hearing of this kind of soup and believe me, I've here for so long. Wow! It looks like something I would enjoy too. What part of Ibo prepares this 'ofe ugba'? Also the word 'obstacles' got me cracking up. You have a way with words…lol!
