  9. Once your stew starts to boil, leaving it on a high heat is simply wasting energy, because no matter how high your gas flame, it can only boil at the maximum temperature of just over 100°C.
    So, once it starts to boil, if you leave it on high, it is still bubbling at 100°C.
    if you lower the heat to low, it will still bubble at 100°C or just over, depending how much salt is in there .
    The only reason for continuing on a high heat would be to boil off some water. Reducing the liquid, right ?
    This can be achieved just as easily on a low heat by removing the lid.
    Voila !
    Same result. Half the energy.
