I traveled to Benin, West Africa, a region that birthed what we know of in Louisiana as gumbo.   2. Hi guys, I am originally from Nigeria, the south east end and okra soup/gumbo would be a popular dish there. We donโ€™t however typically use cheese when cooking and Iโ€™m curious as to what type of cheese was used in this dish because the cheese I know, would kind of melt when exposed to any form of heat, Iโ€™m just curious.
