In the Northern United States, tomatoes at this time of year are terrible. Instead of the fresh Roma tomatoes, could canned tomatoes be used instead. If so, how much?

Lol I totally would have made the mistake of popping the lid open before the rice was fully cooked…especially if I hadn’t eaten in the last few hours. 😋
