Nigerian fufu is made from fermented cassava. You guys always mix this up. Everything dough like food eaten with soup is generally called "swallow" but they are made from different things and processed in different ways too. We have garri, amala *made from yams/plantains that have been dried/dehydrated and milled to powder form and then stired into boiling hot water and left to cook for 5-6mins on fire*, pounded yam; from boiling yams and then pounding it in a mortar hot from the fire using the yam water to soften it etc.

Surya is a Northern Nigeria 'snack'. It's most definitely not a Southern Nigeria cuisine. The name SUYA, is even Northern. SMH Soon we'll hear that kuli-kuli, Masa and Fura day Nono asr from the South too. SMH.
