My Vietnamese dry noodle sauce recipe is bomb.com ask yo mom


VIETNAMESE DRY NOODLE⤵️

Written instructions look intimidating but after watching the recipe video, not too much! PS- I served this dish with a pork bone soup.

INGREDIENTS
7 cloves minced garlic
1-2 TBSP rice flour or cornstarch

    VIETNAMESE DRY NOODLE⤵️

    INGREDIENTS
    7 cloves minced garlic
    1-2 TBSP rice flour or cornstarch
    1/4 cup oil + 2 TBSP oil
    1 shallot, thinly sliced

    COMBINATION ZAUSS
    1/4 cup oyster sauce
    1/4 cup soy sauce
    1/4 cup water
    1/4 brown sugar
    1 TBSP fish sauce
    1 tsp chicken boullion
    Black pepper to taste (I used 1.5 tsp)
    Red pepper flakes— optional

    GROUND MEAT TOPPING
    6 cloves garlic, minced
    1 shallot, minced
    1 lb ground meat of choice, I used pork
    2-3 TBSP COMBINATION ZAUSS
    2 tsp garlic chili paste, chili oil, red pepper flakes— optional
    5 scallion, cut 2 inches wide
    Oil, for cooking

    ASSEMBLING THE BOWL (TOPPING)
    Shredded lettuce
    Bean sprouts, blanched
    Egg noodles, cooked
    Rice noodles, cooked
    Ground meat topping
    Squid, cook to preference*
    Shrimp, cook to preference*
    Quail eggs*
    Mushrooms of choice, cooked to preference*

    *SQUID: I used frozen, pre cooked squid. All I had to do was defrost and heat it through
    *SHRIMP: I seasoned mine with salt, black pepper, garlic power and paprika and cooked on a skillet until cooked through
    *QUAIL EGGS: I used canned quail eggs. These are already cooked. I just had to rinse and heat through
    MUSHROOMS: I used canned straw mushrooms. These are already cooked. I just had to rinse and heat through

    NOTE: ingredients are all optional. You do not have to use everything however, I do recommend you at least have noodles and shredded lettuce

    1. First make your sauce. Coat 7 cloves minced garlic with 1-2 TBSP rice flour and then fry in 1/4 cup oil. TIP: as soon as you start to see your garlic turn color, turn off the heat but continue to stir so it does not burn. Then strain the garlic from the oil Set the garlic aside

    2. Using the same oil you cooked your garlic, add another 2 TBSP oil and cook thinly sliced shallots until you see color.

    3. Once you see color, add all of your ingredients listed under COMBINATION ZAUSS. Bring this to a boil, reduce heat to simmer and simmer for 2-5 minutes.

    4. After 2-5 mins, turn off heat and add minced garlic back in. Combine well. Your COMBINATION ZAUSS is now done.

    5. Now we need to make our GROUND MEAT TOPPING: heat up some oil and saute shallots and garlic til fragrant.

    6. Then add ground meat of choice and cook until 50% of the way cooked.

    7. Then add 2-3 TBSP of your COMBINATION ZAUSS. Combine well.

    8. Then add garlic chili paste— if you are using. Mix this well, turn off heat and then add scallion.

    9. Now all you have to do is assemble your bowl with your noodles, veggies, topping of choice and COMBINATION ZAUSS
