This reminds me of a story I heard of a turtle who went to land. When he came back his fish friend asked what it was like, and the turtle said the land not like the ocean, the grass is not like sea grass, etc. The fish got angry and said "stop telling me what it's not like tell me what it IS like!" Smoky, a slight fatty taste like when you chew beef but more tender, not gamy at all, clean flavor like i dont know how to explain "clean" but you know its a good quality meat, kind of a buttery flavor but thay could depend on the amount of fat the cut has and what type of oil you are using (i usually use olive oil), like a meaty flavor i mean I guess its meat but not like a meaty beef or chicken flavor it has its own meaty flavor that i cant really describe to someone who never tasted it unless i can compare it to something else
porks texture is like beef but firmer and when cooked for long, less fatty, almost dry. Can't really describe the taste, it tastes like prok😂. As a Quebecer I love it since we produce some of the best pork in the world! I totally understand why you don't eat it and I'm glad you try alternatives!
If I had to describe it, its sort of like firmer, fattier dark meat chicken.
