The real pleasure of tajine is to put bread in the gravy. No couscous. It's too heavy for the stomach with the industrial couscous full of water.

That looks pretty good. The cut of beef looks like chuck. imo, lean cuts of beef probably wouldn't be good for 3 hours of cooking.

Made it this weekend. Divided into seven servings and froze in ziplock sandwich bags. Warmed it up for lunch at work today. The aroma set-off many comments inquiring "What's smelling soooo good!" I led them here to your channel and to World Market for their turquoise colored tagine. I added a huge Russet Potato cubed and a carrot cut on the diagonal…simply divine!
