İçli köfte is known with different names all over the world such as kibbeh, stuffed meatball and ishli kofte. Basically, it is a crispy bulgur dough outside filled with delicious, minced meat with pistachio. It is one of the best foods and every bite is heavenly! You can make it traditional way, or I have a special and easy technique for you…

  3. Awesome explanation…I used my mini sushi form (round single or thin triple plastic forms) using plastic film or plastic veggie bag to prevent sticking. Then I just form it like torpedo shape or whatever you like. It’s really a nice hack!! Thanks so very much going to try this recipe. 🥰

  4. Hi Refika,
I was so pleased to find this recipe using an air-fryer!
In all honesty, would you say that the air-fryer ones are as good as the deep fried ones?
I started using an air-fryer 2 months ago & I'm still in the learning process. I made some falafels as well as some Vietnamese Nems which were better than deep-fried!!!
I've never been keen on deep fried food so I'm thrilled to obtain the same result with an air-fryer! Would you consider investigating some deep-fried Turkish recipes using an air-fryer?
Thanks to you & all your team for Fabs videos! You are a joy to watch! 🥰

  5. Im wishing i had this for lunch today.Turkish food is new to me, but i do like greek and other middle eastern cooking wishing . This recipe reminds me of Mexican tamales….they take forever to make, usually by a whole group of people, and taste delicious. Id love to try making this at some point. Without a mixer i imagine that it would be hard labor to stir the crust for 10 minutes or more.
Maybe trader joes has some i can try to see if i like them before going to the whole process. The music group jams i go to always have a potluck feast, these would be very popular !

  8. Hello Refika, I found out last month that I became gluten intolerant, so I can no longer eat bulgur and semolina since they both contain gluten… what could I use as a gluten free substitute for both?
