Marqa Recipe – How to Cook Tunisian Chicken Stew

Nothing says Mediterranean cooking like a hearty stew of potatoes and chicken… This Tunisian stew has classic North African spices and is possibly the quickest meal I’ve made on this show. Enjoy!

  1. i have few comments about the dish and i hope they don't come as negative because you have been misinformed about a lot of the things in the video.

1- the name is wrong. basically marqa means sauce or soup and not that dish in particular. that one is called marqet barata which means potato soup.

2- we fry the tomato paste with the onions and garlic to remove the acidity and we add the chicken afterwards.

3- the harissa you used is not meant for cooking but for sandwiches. while you can use it for cooking, the actually harrisa used is a dried peppers paste while that one is cooked chilli paste. drastically different in flavor.

4- table is coriander. the spice blend you used is called ras hanout.

5- it is eaten with bread not with fork or spoon.
