Tomatoes?
Cut the top and bottom of the pepper off. Make a cut down the side of the pepper and open it. You then have a long strip. Slide the knife across the strip to remove the membrane and seeds.

This was so delicious. Added some green beans, a bit more coconut milk, and used 3 chopped tinned tomatoes instead of 2 fresh. Highly recommend.
