Sukuma wiki is Kale, and it got the name from harvesting the leaves weekly (leaves we ripe for harvest after every week). Hence sukuma wiki (leaf harvested in a week). Also Nyama choma isn't the national food of Kenya. It like saying Grilled BBQ is the staple food for USA.
