The Enslaved Africans also bought the Kala Concept to New Orleans. Somehow it was then called Calas. Maybe because of the French. Being that Africans bought rice with them to America. The women would sell Calas – a mixture of Rice, Flour, vanilla, sugar. Turn them into a ball and fry them and put powdered sugar on them. This also gave birth later to the Beignet as we know it in New Orleans.

2 cups warm water 2 tablespoons active dry yeast let sit 5 minutes covered 3 cups flour 1/2 cups sugar and little salt cover and set in warm area 1-2 hours. Thank you for sharing.

Does it matter how big you make them when you put them in the oil? Mine were a little off I followed every, maybe because I made them too big?
