It's such a shame that grocery store ginger has been treated with chemicals to stop germination. I think that's why it shrivels up so badly. Once in a while I get one that seems to be shrivel resistant, and the buds are very alive, seem even to grow a bit. Then I'm really happy. Besides that, if it weren't treated we could stick some of it in the ground and grow it. Stopping us from doing that is probably the point of treating it.
