Safra, also called Sefra, is an aromatic semolina dessert from the once thriving Jewish Community of Tripoli, Libya. Rome’s cuisine benefitted when the Libyan Jews found refuge in Italy in 1967. preparation-wise, safra is very similar to basbousa/namoura…biggest difference lies in the ingredients, especially the egg and sesame seeds, the uses of which I have never seen in any basbousa/namoura recipe that I know of…great presentation by the way…am inspired to try this recipe in my own kitchen…
