My auntie was a epitsie baker
She used to wake up at dawn to prepare and I used to wake up with her to help with the preparation. She baked her epitsie in a proper mud oven.

Delicious
It's best mashed than blended. It can be mashed in in an Asanka, with a potato masher or mashed in a food processor. You can also mix in ground roasted cornmeal instead of flour. It's really delicious. It's just the kaakro mixture mixed with palm oil and baked instead of fried.
Aye ye a ashaamo or ashaaku. Baked plantain in leaves.
