  2. Chapati was introduced to East Africa when the British colonizers brought indentured servants from British India to build a railway. British India was what is present day south Asia. Other things introduced to British East Africa from British India were spices. There's several spices introduced from south Asia common in East African cooking like coriander, cumin, cinnamon, cardamom, and cloves.

  3. I was asked if I could make a batch of Chapati to be taken to Burning Man this year (next week).

    As Charlie mentioned that we were stepping away from “white flour” for his next series of recipes, I realized that I had an unopened bag of Organic 7-grain Atta flour (it is a superfine flour, which I had purchased when I made the Aloo Paratha recipe he posted a while back). The Chapati recipe called for 200g of white bread flour and I had 1000g of Atta flour, so I made a 5x batch of dough – yikes!! As it was a multi-grain flour, I did have to add additional liquid to make it a workable dough. I also applied the No-knead method as I was not kneading the giant mass of dough I had made.😆

    Divided into 24 equal portions, shaped into balls and placed in the fridge overnight. Today after work I completed the remainder of the recipe and lo and behold, I have 24 chapati cooling, to be wrapped and placed in the freezer. Photos have been posted

    Thanks, Charlie for this wonderful recipe – it is one of my daughter's favorite and now she and her husband make the Burundian Stew on their own. FYI, your Pain Au Levain, Deli Rye, Awesome Soft Pretzels, Silky Lime Tart and African Chapati will be enjoyed at Burning Man by my daughter, her husband and the members of their "camp". 🤩

  4. So back again – I think this is the 3rd time I've made this one – my wife absolutely loves it so I make it when I'm in the need of brownie points! I've started to add some smokey paprika to the curry to give it a little more of the 'cooked over an open fire' kinda feel. But the recipe is so good. I love that it all fits together – like start making the dough – while its resting make the curry – while its cooking fry the Chapati – serve. And now my techniques are coming together I am not having to check the recipe every 30 sec 🙂 – thanks Charlie

  6. Thanks Charlie – another fantastic recipe – well 2 really! The flatbread turned out perfect and the veggie stew had plenty of punch and flavour without being a curry (though I do like curries!). I used a 3 bean mix which was kidney, pinto and black beans – when I do this one again I think I will try it with only black beans. Another great meal!

  7. SO simple and easy! This recipe is totally ace! I made the chapati to go with another dish last night but used ghee instead of oil for the layers. Sooo good! We used the leftover chapati as wraps the next day. Will try it with the bean stew next time. I started baking about 2 months ago and your channel & website is my #1 for learning and on-point recipes. Thanks Charlie. Will leave you a tip when I can.

  9. Winning combo for sure. These are the times I wonder why I always insist on buying dry beans, because I have to wait to make the dish! (But not long with a pressure cooker.) That stew looks so good, I wish I had it in front of me.
