Thank you for the video… my friend is from Ghana and I had that dish for the very first time when I was a kid at his house and was absolutely amazing I've ever since wanted the recipe… I don't know if this is exactly how they make it but I'm going to try it because it looked delicious. You note that it should be cooked until the oil comes out, and I have seen this done in other similar dishes. What is the advantage of having your sauce/gravy split that way? It's quite contrary to western cuisine sauces, but it seems very deliberate.
I'm an Indian. The recipe is wonderful. Why, I wonder, there is no ginger in a meat preparation!!!?

Best mafe video I've seen so far. This is how my husband, from Senegal, taught me to cook mafe. I never used broccoli before, but that looks delicious. I'll try that next time. Yummy! This is how I cook my mafe. I saw some people add peanut butter too early or add water to the peanut butter on the side (ugh). This way is best. The only difference is I was taught to scoop out some of the tomato sauce into a side sauce pan and mix peanut butter there, so it won't break down the vegetables while mixing. Then pour the tomato sauce & peanut butter mix back into the stew and mix. This way seems easier, so long as the potatoes are not overcooked, it should work. Thanks for this excellent video!
