  1. i cook the vegetable mix slightly before adding to the meat. First, it mixes much better and the onion wont split from meat. second, the flavours are much deeper. sometimes i finely grate an onion or add onion juice in the mix if i want the raw-onionish flavour to come out.

  2. With due respect , this is YOUR adulterated version of the Lebanese KAFTA as the authentic one in it's purest delectable form NEVER has , cardamom cumin , paprika , mint , sumac & garlic . It's SIMPLY , 60/40 LAMB mince , parsley , onions , black pepper , cinnamon & sea salt , no more no less !!

  3. I tried this, but for some reason the meat would not stay on the skewers…..was there something I need to try different, or something I was doing wrong?

    Black pepper half table spoon
    Cumin half table spoon
    Half teaspoon sweet paprika
    Half teaspoon ground cinnamon
    Ground cardamom half teaspoon
    2-3 crushed garlic cloves
