  1. The writhing of recipes for Nigerians food is also my biggest problem. My kids grew up eating Nigerian food and they love it. They will ask me for recipes and I will said to them., there’s no recipe for my food, you have to cook to your liking. Now they just go to Nigeria restaurant and buy the food from them.

  2. I’ve heard of this dish but had never seen it before. Watching it get made was so awesome. The amount of heat spoke to me. I never shy away from spicy food and am so excited to try this out.

  4. Had jollof rice at a Kenyan restaurant served with a whole fried talapia and fried plantains. It was excellent. The version they did, they added in some sauteed veg at the end–nothing fancy, clearly frozen mixed veg, but it was so delicious, I willingly ate lima beans for the first time in my life. It's all about the obe ate.

  5. With the fishier variants of this, can someone suggest alternatives for the fermented conch? Fish sauce is common, but would anchovy paste work? And before you complain at me about this, I'm currently renovating a kitchen. My stove is in a cardboard box in the garage, so my horizons are limited.
