Vegetables
🔹️Tomato 🍅
🔹️Red Bell Pepper 🫑
🔹️Garlic 🧄
🔹️Red onion 🌰
🔹️Scotch Bonnet ( or Habenero
Pepper) 🌶️

Blend and Roast
🔸️Place vegetables on sheet pan
and coat in olive oil.
🔸️Then, roast vegetables in the
oven
🔸️Place roasted vegetables in the
blender with ginger until pureed

Cooking
1.) In a pot, add vegetable oil and
fry rex onions.
2.) Add tomato paste
3.) Add vegetable puree
4.) Season with salt, curry powder,
chicken bouillon, cayenne pepper,
thyme, and a pinch of nutmeg
5.) Add bay leaves
6.) Cover pot with foil and pot lid to
simmer for 20 minutes
7.) Remove foil and pot lid, to mix in
the parboiled rice 🍚
8.) Add enough chicken broth to
cover the rice
9.) After 20 minutes, remove lid
and foil to fluff the rice 🍚
10.) Season it to taste
11.) Remove bay leaves

You a lie. I just got my 1st taste of African food. Specifically the Jollof rice; and you’ll can have that. That scorched burned flavor is so overpowering it’s crazy. I wanted to like it but no sir. Take it back.

When you cook rice the liquid to rice ratio IS THE MOST IMPORTANT. Anyone who follows this shxt to the letter will always end up fucking up the rice. You don’t know how much rice you should use nor do you know how much sauce you should use. They just say to mix it together as if it’s no way you’re gonna make the soggiest rice ever
