  2. I'm a retired culinary professinal, and I'm always fascinated at learning the reasons of why traditional foods are prepared in certain ways. Can anyone tell me why these types of porridges are blending and strained so thoroughly to get a completely smooth porridge? And is the fermentation for flavor or to increase the nutritional value or digestibility? I make a spicy millet porridge, but I prefer the texture of the whole grain. Usually I'll boil the water for cooking the millet with the spices for 10-15 minutes; strain out the spices, and then sdd the millet and cook until the millets are soft and creamy. Sometimes I'll add some oat flour or sorghum flour for variety and more nutrition. Love to serve these with fresh fruit, nuts, and honey.
