How to make FUFU and EGUSI SOUP/STEW for your viral TikTok African food challenge


INGREDIENTS: Egusi soup-:
* 6 each, chicken drums and thighs – cleaned with lemon juice
* 1/2 tsp Granulated garlic
* 1/4 tsp cayenne pepper (optional)
* 1 tsp salt & 1/2 tsp black pepper
* 1/2 tsp paprika
* 1/2 tsp granulated onion
* 1 chicken bouillon/stock cube
* 1 Tbsp olive oil & extra for oven grilling chicken

Oh this is interesting – i'm Ethiopian and i've lived in kenya for a bit so I love oogali and i was so intrigued by fufu but i thought egusi was made from all sorts of exotic fish and meats and so i've always been hesitant to get into it. (I've tried it at a restaurant once before and it smelledddd veryyyyy strong in a very unpleasant, fermented/decaying fish sort of way) but this recipe here is so doable and made from everyday ingredients so im actually really excited to give it a go.   4. Second time cooking egusi soup!! I love it, also you mentioned the egusi is from pumpkin seed, can it be the typical orange pumpkins?? Like the ones we get during halloween or is there a specific kind? I want to make my own grounded egusi because its too expensive at the store

  6. Fantastic job, only I wished you had made home made fufu ,I'm in North America and I don't think I can find fufu flour, but I could serve the egusi over mashed potatoes 😊
