  1. This is a very rudimentary explanation. Using white sugar alone in this method makes what’s called Kilju (kill-you). Kilju is meant to have additional flavors added to it after fermentation and clarification. In the concentration discussed in this video you should end up with about 12% abv.

Using fruit juices by themselves is a better way to start home brewing. Bread yeast will work but your end results will vary. Brewing yeast is more consistent and will take less time to clear up.

  2. You do NOT want to make alcohol from just table sugar and baking yeast. Even if you can't get actual brewers yeast and are stuck wit bread yeast, use a fruit juice – you CAN add sugar to this as well, but don't use table sugar – use brown sugar, or honey, or something. Apple juice is very easy to work with, make certain it DOES NOT have preservatives in it, that will just kill the yeast.

This video does explain how to TECHNICALLY make alcohol, but it will be awful.

There's tons of people who have done this stuff. It isn't hard to do, 1-2 weeks in carbonation isn't enough, 3 or 4 is what you should do. It's easy to pasteurize it just heat to 140F for 10 minutes – this will kill the yeast. You can also freeze it to concentrate the alcohol if you wish. You also want to age it. Just like some foods tend to get better over time as the flavors mix and mellow, same with making hard cider or a wine.
