I think that might be one of the best rice recipes Ive ever seen. Its very similar to a mexican style rice that I make. A few things I'd do different tho, either undercook the rice and add the fish early or cook the fish seperate so that the rice doesn't get sticky. Also saving a bit of that tomato pepper puree and adding it at the end would really give it better flavor. Nice work with the tomato and butter at the end, I can tell that really helps it. Looks damn good.
