The part of the world whose dishes I’ve been most scared of is West Africa. Dish 1/16, here we go!

Here are all the ingredients in SI and US units:
(1 tbsp is 15 ml and 1 tsp is 5 ml. That’s the same as US tbsp and tsp)

  1. Hello there, thanks for your recipe. I am from West Africa and there's a far easier way to peel off the skins. Use a food processor or blender to pulse the peas few times after soaking in water 15 minutes- 1 hour; the skins would slide right off and you can decant them off. Use a sieve/colander to catch the skins, it would not make such a mess.

Ok, guys quick correction AKARA or Akaraje or Acra or Accra is a Yoruba food from Nigeria (which you have the Yorubas all over west Africa .slaves taken to Brazil(up through the 1900s )took this food with them. Slaves taken to the Carribean like Trinidad and Haiti knew how to make but substitute for flour mixed with chicken or fish.Kuli Kuli is also northern Nigeria. Great video
