Is it general mass that controls the transfer of heat, or is it more based on surface area, when using liquid submersion? I cant figure which would be better, chunks or strips, or what kind of chunk shapes to use best. probably doesnt matter too much, but it would if you were using larger pieces of meat, in like deck-of-card sized blops.

That sauce looked SUPERB! DEFO gona try that ty.

But one question. My father taught me a lot about cooking and he told me to always take a sauce off the heat when adding cream so you don't cause it to congeal. Sitr it a bit and then reapply the heat.
Is there a reason you didn't take it off the heat when you added the cream?

Key issue tho (ive made this mistake before) in his rush he didnt wipe the grinds he filtered out from the ladel before using it to serve. This pollutes the sauce with a gritty texture.
