the problem in Indo is that nine teaches the fisherman to brine the fish when caught. So, you have fresh fish caught at night mostky that sit in ice w/out brine for too long and then sits at market in old ice water w no brine. Its really sad they still cannot figure this out.
So cool they are using a readily abundant, free cooking source!
