From what I know, and from what I've seen authentic, Ethiopian, cooking does start with the onions first, and then add the oil later
I love injera and I also make sorghum dosa too
You can roast the beets first and then peel once they are done or boil the beets and then the peeling will come off

It produces aroma or scent of the onions especially with shallots or red onion. For this one I would use shallots.
