Living in Florida, on the second day my started grow a lots (like in your first day) well did the discard and feed , 4hours later raised 2 fines in size!!!!
Let’s talk filtered water, are you talking refrigerator filter, tap filter, bottled water or something else? If from the refrigerator filter then it’s cold and do you measure and wait till room temp? Thanks!

QUESTION- YOU SKIM OFF HALF FROM THE TOP WITHOUT STIRRING IT FIRST? ( I did this and it tripled in size on day 3 so day 4 I stirred first then discarded half. It’s not growing much at all now on day 5)

For People without the Weck Jar:
Day 1: Put 100g water and flour -> 200g.
Day 2: Zero the scale, remove starter until -100g, feed 100g flour and water -> the scale should got to +100g, you should have 300g of starter
Day 3 and after: Zero the scale, remove starter until -200g, feed 100g flour and water -> the scale should got to 0g, again you should have 300g of starter
I hope I made no mistakes, but it should be correct.
Makes the maths even easier then with the Weck Jar, of course you can do it like this with a Weck Jar too.

How to keep it if you dont Use it right the way when it matured enough?
This is round two for me. Both times, I fed my sourdough starter on the third day, the first time it didn't grow at all after 24 hours. And so far, 7 hours into my first feeding I only have a couple of bubbles on top. I pray that by tomorrow morning, I have some growth.
