  1. If one doesn't have a 4" riser but does have a 1"skewer rack is a 3/4 chimney of lump charcoal still appopriate? Don't want to burn the skewers (appreciating that turning more often will be required). NB – this should be on the Schwarma video – it flipped over mid-post! 😂
