i like using green Cubanelle peppers and hot Hungarian peppers :). Bell peppers are too sweet for me to be eaten with eggs.

3 tablespoons of butter/olive oil (I'll only use 1.)

Add onions and bell pepper, cook for 10-12 minutes.
1 Tsp paprika
1 Tsp chilli powder
2 Tsp cumin
1 Tsp Harissa (my choice)
Add garlic and stir constantly for 2 minutes.
1 can tomato's (or 6 small tomato that are peeled and crushed) keep on heat till it's boiling, reduce to simmer and keep on heat for about 15 mins.
Half Tsp salt
Half Tsp black pepper

Add eggs, mix. (or you can keep it sunny side up but ew)

You need to also add some diced eggplant that is fried separately until browned, then added at the end… delicious 🤤

add pretty much any mushroom as they soak up a lot of flavour and at a really good texture even if you don't cook the mushrooms themselves for a long time.
Also, if the season permits, get fresh tomatoes on the vine from your grocery, slice them up and it doesn't have to be finally chopped as the tomatoes will soften and water will simmer off.

I also prefer relying on the tomatoes for most of the salt and using grated grana pardano in the last minute or two.

ahh you brought back beautiful memories when my mom used to make this recipe and some times she added dry red meat .
you know some times you don't need to add alot of spices just tumerk and white pepper ,salt more than enough or at least that's for me my point is this recipe doesn't need lots of spices it would taste more natural but I love the way you made it thank you for sharing it's very yummy dish 👌💯

Bro I justade this recipe for me and my family and it turned put amazing the only thing i would change is the red sauce qas a bit bitter so i would prob add something like lemon juice to make it taste better, but overall this was a 7.8/10
